Ingredients
  

  • 2 chicken breasts cut into bite-sized pieces
  • 1 bell pepper red, green, or yellow, cut into bite-sized pieces
  • 1 onion cut into bite-sized pieces
  • 1 can about 14 oz of pineapple chunks, drained (reserve the juice)
  • 2 green onions chopped (for garnish)
  • Oil for cooking
  • For the Sweet and Sour Sauce:
  • 2 tablespoons ketchup
  • Juice from the pineapple can about 1 cup
  • 1/2 cup granulated sugar
  • Juice from 1 lemon approximately 2 tablespoons
  • 2 teaspoons corn starch
  • A pinch of salt to taste

Instructions
 

  • In a medium bowl, whisk together the ketchup, pineapple juice, sugar, lemon juice, and corn starch until well combined.
  • Make sure there are no lumps from the corn starch. Set aside.
  • Heat 2 tablespoons of oil in a large skillet or wok over medium-high heat.
  • Add the chicken pieces in a single layer.
  • Cook the chicken for about 5-7 minutes, turning occasionally, until it is golden brown and cooked through.
  • In the same skillet, add a little more oil if needed.
  • Add the sliced bell pepper and onion. Sauté for 3-4 minutes, or until they are tender but still crisp.
  • Add pineapple chunks and pour the sweet and sour sauce over the chicken and vegetables. Stir everything together to coat.
  • Allow the mixture to simmer for about 5-7 minutes, or until the sauce has thickened and everything is heated through.
  • Serve the Sweet and Sour Chicken over steamed rice or your favorite grain.
  • Garnish with chopped green onions for a fresh finish.
