Today, we’ll embark on a culinary journey that combines fresh ingredients, like juicy cherry tomatoes and tender spinach, with the rich creaminess of burrata cheese. The Magic of Burrata
Let’s start by talking about the star of this dish – Burrata. Burrata is a fresh Italian cheese made from mozzarella and cream. It has a creamy interior that oozes out when you cut into it, adding a luxurious touch to any dish. When paired with pasta, Burrata adds a rich and decadent element that takes the dish to a whole new level.
Burst of Freshness with Cherry Tomatoes
Cherry tomatoes are another key ingredient in this recipe. Their sweet and tangy flavor complements the creaminess of the Burrata perfectly. When roasted, cherry tomatoes become even more flavorful, adding a burst of freshness to every bite of pasta.
Nutrient-Packed Spinach
To add a pop of color and a boost of nutrients to this dish, we incorporate spinach. Spinach is not only packed with vitamins and minerals but also adds a subtle earthy flavor to the pasta. Also, it wilts down beautifully when mixed with the warm pasta, creating a harmonious blend of flavors and textures.

Ingredients
- 8 oz pasta your choice: spaghetti, fettuccine, or tagliatelle works well
- 1/2 cup reserved pasta water
- 1 pint cherry tomatoes
- 1 cup fresh spinach
- 1 medium onion thinly sliced
- 5-7 garlic cloves minced
- 1 burrata cheese
- 4 tbsp olive oil
- Salt and pepper to taste
Instructions
- Step 1: Cook the Pasta
- Bring a large pot of salted water to a boil.
- Add the pasta and cook according to package directions until al dente. Reserve 1/2 cup of the pasta water, then drain the pasta and set it aside.
- Step 2: Sauté the Vegetables
- In a large skillet, heat 4 tablespoons of olive oil over medium heat.
- Add the sliced onion and minced garlic, season with salt and pepper. Sauté until it becomes translucent and fragrant, about 3-5 minutes, being careful not to burn it.
- Step 3: Add the Tomatoes and Spinach
- Add the cherry tomatoes to the skillet. Sauté for about 5-7 minutes, or until the tomatoes are soft and start to blister.
- Toss in the chopped spinach and sauté for another 2-3 minutes until wilted.
- Step 4: Combine with Pasta
- Add the cooked pasta to the skillet with the roasted cherry tomatoes and spinach.
- Pour in the reserved pasta water, tossing everything together until well combined. If the pasta seems too dry, you can add a bit more pasta water or olive oil as needed.
- Step 5: Serve with Burrata
- Season with salt and pepper to taste if needed.
- Divide the pasta among serving plates and place a generous piece of burrata cheese on top of each serving. The heat from the pasta will begin to melt the burrata, creating a creamy sauce.
- Step 6: Optional Garnish
- Drizzle with a little extra olive oil and sprinkle with fresh herbs or more black pepper if desired.
