Ingredients
  

  • 8 oz pasta your choice: spaghetti, fettuccine, or tagliatelle works well
  • 1/2 cup reserved pasta water
  • 1 pint cherry tomatoes
  • 1 cup fresh spinach
  • 1 medium onion thinly sliced
  • 5-7 garlic cloves minced
  • 1 burrata cheese
  • 4 tbsp olive oil
  • Salt and pepper to taste

Instructions
 

  • Step 1: Cook the Pasta
  • Bring a large pot of salted water to a boil.
  • Add the pasta and cook according to package directions until al dente. Reserve 1/2 cup of the pasta water, then drain the pasta and set it aside.
  • Step 2: Sauté the Vegetables
  • In a large skillet, heat 4 tablespoons of olive oil over medium heat.
  • Add the sliced onion and minced garlic, season with salt and pepper. Sauté until it becomes translucent and fragrant, about 3-5 minutes, being careful not to burn it.
  • Step 3: Add the Tomatoes and Spinach
  • Add the cherry tomatoes to the skillet. Sauté for about 5-7 minutes, or until the tomatoes are soft and start to blister.
  • Toss in the chopped spinach and sauté for another 2-3 minutes until wilted.
  • Step 4: Combine with Pasta
  • Add the cooked pasta to the skillet with the roasted cherry tomatoes and spinach.
  • Pour in the reserved pasta water, tossing everything together until well combined. If the pasta seems too dry, you can add a bit more pasta water or olive oil as needed.
  • Step 5: Serve with Burrata
  • Season with salt and pepper to taste if needed.
  • Divide the pasta among serving plates and place a generous piece of burrata cheese on top of each serving. The heat from the pasta will begin to melt the burrata, creating a creamy sauce.
  • Step 6: Optional Garnish
  • Drizzle with a little extra olive oil and sprinkle with fresh herbs or more black pepper if desired.
