Step 1: Cook the Pasta
Bring a large pot of salted water to a boil.
Add the pasta and cook according to package directions until al dente. Reserve 1/2 cup of the pasta water, then drain the pasta and set it aside.
Step 2: Sauté the Vegetables
In a large skillet, heat 4 tablespoons of olive oil over medium heat.
Add the sliced onion and minced garlic, season with salt and pepper. Sauté until it becomes translucent and fragrant, about 3-5 minutes, being careful not to burn it.
Step 3: Add the Tomatoes and Spinach
Add the cherry tomatoes to the skillet. Sauté for about 5-7 minutes, or until the tomatoes are soft and start to blister.
Toss in the chopped spinach and sauté for another 2-3 minutes until wilted.
Step 4: Combine with Pasta
Add the cooked pasta to the skillet with the roasted cherry tomatoes and spinach.
Pour in the reserved pasta water, tossing everything together until well combined. If the pasta seems too dry, you can add a bit more pasta water or olive oil as needed.
Step 5: Serve with Burrata
Season with salt and pepper to taste if needed.
Divide the pasta among serving plates and place a generous piece of burrata cheese on top of each serving. The heat from the pasta will begin to melt the burrata, creating a creamy sauce.
Step 6: Optional Garnish
Drizzle with a little extra olive oil and sprinkle with fresh herbs or more black pepper if desired.
