  • Corn starch or potato starch flour
  • Eggs
  • Salt
  • Onion and/or bacon

Instructions:

Step 1: Prepare the Potatoes

To start, peel and boil the potatoes until they’re soft. Then, mash them and let them cool.

Step 2: Prepare the Work Surface

Sprinkle all-purpose flour on your kitchen counter or table and add the potatoes.

Step 3: Combine Potatoes and Cornstarch

Take the cooled potatoes and shape them into a flat circle or square and divide it into four equal parts. Set one of these portions aside, and in it place add corn starch/potato starch

Step 4: Add Eggs and Salt

Add eggs and salt to the potato/corn starch mixture, combining everything until it forms a cohesive dough.

Step 5: Divide and Shape the Dough

Divide the dough into four equal parts. Take one part, shape it into a 1-inch thick roll, and then cut it into 2 inch pieces. Form a flat ball from each piece and create a small indentation in the center using your finger.

Step 6: Repeat the Process

Repeat steps 5 until you’ve used up all the dough. You should end up with around 35-40 Silesian dumplings.

Step 7: Cook the Dumplings

Bring a large pot of water to a boil and add salt. Add no more than 15 dumplings at a time to prevent overcrowding. Gently stir them to prevent sticking.

Step 8: Cook for 3 Minutes

Cook the dumplings for exactly 3 minutes from the moment they rise to the surface. This will ensure they’re cooked through but still retain their tender texture.

Step 9: Serve

Use a colander spoon to remove the cooked dumplings from the water. Serve them hot with sautéed onions and/or crispy bacon, accompanied by a glass of cold milk. The perfect comfort food!
