- 1 chicken breast cooked or baked and cubed
- 2 cups cooked orzo pasta
- 1 red bell pepper diced
- 2 green onions sliced
- 1 can sweet corn drained
- 4 dill cucumbers sliced
- 1 cup grapes halved
- 1 tbsp fresh dill chopped
- Dressing:
- 1 cup plain yogurt
- 2 tbsp mustard
- 2 tbsp mayonnaise
- ½ tsp black pepper
- 1 tsp salt
Cook or bake the chicken breast until fully cooked. Let it cool slightly, then dice into cubes.
Boil water and cook the orzo according to package instructions. Drain and let it cool.
Dice the red bell pepper, slice the green onions and cucumbers, and halve the grapes.
In a bowl, whisk together the plain yogurt, mustard, mayonnaise, black pepper, and salt until smooth.
In a large mixing bowl, add the cooked orzo, sliced chicken, bell pepper, green onions, sweet corn, cucumbers, grapes, and dill. Pour the dressing over the mixture and toss gently to combine.
Chill the salad in the refrigerator for at least 30 minutes before serving to let the flavors meld. Garnish with extra dill if desired.
