- 4 Persian cucumbers
- 2 green onions
- 2 tbsp low-fat sour cream
- 3/4 tsp salt
- 1/2 tsp black pepper
- 3/4 tsp sugar
Wash and peel the cucumbers. Slice them thinly into rounds. You can also peel them partially or leave the skin on for added texture and nutrients.
Trim the green onions and slice them thinly, including both the white and green parts.
In a large mixing bowl, toss the sliced cucumbers and green onions with sour cream, salt sugar, and black pepper. Mix gently to coat everything evenly.
