Ingredients
  

  • 4 Persian cucumbers
  • 2 green onions
  • 2 tbsp low-fat sour cream
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 3/4 tsp sugar

Instructions
 

  • Wash and peel the cucumbers. Slice them thinly into rounds. You can also peel them partially or leave the skin on for added texture and nutrients.
  • Trim the green onions and slice them thinly, including both the white and green parts.
  • In a large mixing bowl, toss the sliced cucumbers and green onions with sour cream, salt sugar, and black pepper. Mix gently to coat everything evenly.
  • (Note: You might want to adjust the salt and sugar to taste.) Garnish with fresh herbs if desired and serve!
