Salt and pepper to taste
Instructions
Slice the pork tenderloin into 1-inch thick medallions.
Peel and slice the onion and garlic into thin strips.
In a small bowl, mix together flour, sour cream, and water to create a creamy sauce.
Heat a skillet over medium-high heat with a 2 tablespoon of oil. Add the pork tenderloin and season with salt and pepper on all sides.
Sear the pork for 2-3 minutes per side, or until browned on all sides.
Add the sliced onion, garlic and beef stock to the skillet and bring to a simmer. Cover the skillet with a lid and cook for 20 minutes.
Add the creamy sauce to the skillet and stir to combine and cook for an additional 2 minutes.
Serve the pork tenderloin over mashed potatoes with a side of salad or dill pickle. Garnish with fresh parsley or chives for added flavor and color.
