Ingredients
  

  • 2 cup flour all-purpose
  • 2 tbsp sugar granulated
  • 2 tsp baking powder
  • 1 egg
  • 1 cup milk low fat
  • 1 apple peeled, cored, and grated
  • 4 tbsp oil more if needed

Instructions
 

  • Grate an apple using a grater or food processor.

  • In a bowl, combine the egg and sugar, then beat with an electric mixer until the egg becomes lighter in color.

  • Add the flour, milk and baking powder.
  • Continue mixing until well combined.
  • Gently fold the grated apple into the batter.
  • Heat a non-stick skillet or griddle over medium-high heat. Add oil. Once hot, ladle about 2 tbsp of pancake batter onto the skillet for each pancake.

  • Cook the pancakes for about 2-3 minutes on one side, until you see bubbles forming on the surface. Flip the pancakes and cook for another 1-2 minutes on the other side.
  • Remove the pancakes from the skillet and keep them warm. Repeat the process until all the batter is used.
  • Serve the juicy apple pancakes with your favorite toppings such as maple syrup, powder sugar, fruits or yogurt. Enjoy!
