Ingredients
  

  • 1 cup rolled oats quick cook
  • 1/2 cup ground flaxseed meal
  • 1/2 cup crunchy nut butter peanut, almond, or sunflower
  • 1/3 maple syrup
  • splash of vanilla extract
  • pinch of sat
  • 1/4 cup chocolate chips optional

Instructions
 

  • Combine Ingredients: In a large mixing bowl, combine all the ingredients. Stir until fully mixed and the mixture holds together well.
  • Form the Bites: After chilling, remove the mixture from the refrigerator. Using your hands, scoop out small portions (about 1 teaspoon) and roll them into balls. If the mixture is too sticky, you can lightly wet your hands with water to make rolling easier.
  • Store the Bites: Place the rolled energy bites on a baking sheet lined with parchment paper. If you need to, you can place them in the refrigerator to firm up for another 10-15 minutes. Once set, transfer them to an airtight container.
  • Refrigerate or Freeze: Store the energy bites in the refrigerator for up to one week or in the freezer for up to three months. Enjoy them as a quick snack or as a pre- or post-workout boost!
