One-Pot Ravioli in Creamy Sauce

Ingredients
  

  • 9 oz ravioli I'm using ricotta and spinach ravioli
  • 2 boneless skinless chicken thighs
  • 1 cup chicken broth/water
  • 1 tbsp tomato paste
  • 1 cup spinach
  • 1 onion
  • 1 tbsp low fat sour cream
  • 5-7 garlic cloves
  • 4 tbsp oil
  • 1/2 tsp of: salt and black pepper
  • 1 tsp of: paprika, granulated garlic, Italian seasoning

  • Step 1: Prepare the Vegetables and Chicken
  • Begin by gathering all your ingredients for a streamlined cooking experience.
  • Chop the Vegetables: Slice the onion into thin strips, mince the garlic cloves, and dice the chicken thighs into bite-sized pieces. Have everything ready before you start cooking to ensure a smooth preparation process.
  • Step 2: Sauté the Chicken and Vegetables
  • In a large pot or deep skillet, heat 4 tablespoons of olive oil over medium heat.
  • Cook the Aromatics: Once the oil is shimmering, add the sliced onion and minced garlic. Sauté for 2-4 minutes until fragrant and the onions turn translucent.
  • Add the Chicken: Incorporate the diced chicken into the pot along with your seasonings. Stir everything together, cooking for about 3-5 minutes
  • Step 3: Create the Sauce and Incorporate the Ravioli
  • Next, it’s time to make the sauce.
  • Mix in the Sauce Ingredients: Stir in 1 tablespoon of tomato paste, followed by 1 cup of chicken broth (or water) and a couple of tablespoons of sour cream. Mix well to combine, then cover the pot. Let it simmer for an additional 5 minutes to allow the flavors to meld.
  • Cook the Ravioli: After the sauce has thickened slightly, gently add the ravioli to the pot. Cook for about 2 minutes, then fold in the fresh spinach. Continue to cook for another minute or so, stirring occasionally, until the spinach wilts and the ravioli is heated through.
  • Step 4: Garnish and Serve
  • To finish, serve the dish hot in bowls or plates.
  • Add the Finishing Touches: Garnish each serving with freshly grated Parmesan cheese and a sprinkle of fresh basil, if desired.
