Ingredients
  

  • 1 cup couscous
  • 1 1/4 cups hot water or broth
  • 4 tbsp olive oil
  • 1/2 cucumber
  • 1 tomatoe
  • 1/4 cup chipped parsley and cilantro
  • 1/2 lemon
  • salt and black pepper

Instructions
 

  • Add couscous to the bowl.
  • Pour hot water over couscous.
  • Cover the bowl with a lid and let it sit for 5 minutes to allow the couscous to absorb the liquid.
  • Fluff the couscous with a fork to separate the grains.
  • Add diced cucumber, tomato and chopped herbs.
  • Drizzle olive oil and squeeze fresh lemon juice.
  • Season with black pepper and salt to taste if needed.
  • Mix everything together.
