The split pea soup with ribs and sausage is a hearty and flavorful dish. The soup is cooked slowly to allow the flavors to meld together, resulting in a comforting and satisfying meal.
Start by rinsing the split peas to remove any debris.
To the large pot add the ribs, carrots, bay leaf, salt, and water. Cover and let it cook for 30 minutes.
Chop the onion and sausage into bite-sized pieces. In a separate pan, add oil and sauté the onion until golden brown (about 5 minutes). Add the sausage and continue to sauté for another 5 min. Add marjoram and flour and sauté for 2 min.
Remove the carrots from the pot and let them cool down. Add the split peas to the pot, cover, and continue to cook for 20 min.
Cut the carrots and potatoes into small cubes. Add them to the soup along with the sautéed onion and sausage. Mix everything together, cover, and continue to cook for 15 minutes.
Check the soup occasionally, season with black pepper and marjoram, and add more water if needed to achieve your desired consistency.
Serve the soup garnished with fresh parsley for a pop of color and freshness.
