- FOR THE TORTELLINI
- 1 package of cheese-filled tortellini you can use fresh or dried
- ¼ onion
- 1 cup of fresh spinach leaves
- 1 cup of sliced mushrooms
- 1 garlic clove
- Salt and pepper to taste
- 1 tsp paprika
- 4 tablespoon oil
- FOR THE CREAMY TOMATO SAUCE
- 2 tomatoes
- ⅓ bell pepper
- ¼ onion
- 2 garlic cloves
- 1 tbsp sour cream
Cook the tortellini:
Bring a large pot of salted water to a boil. Cook the tortellini according to the package instructions
Sauté the mushrooms and onion:
In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and onion, cook until they're tender and lightly browned, about 3-4 minutes. Season with paprika, salt and pepper to taste.
Make the creamy tomato sauce:
Add 1/4 onion, 1/3 bell pepper, 2 tomatoes and 2 garlic cloves to the food processor and blend until smooth.

Add the tomato sauce and 1 tbsp sour cream to the mushroom and onion. Stir well to combine. Bring the sauce to a simmer and let it cook for about 5-10 minutes stirring occasionally until it thickens slightly.
Combine the tortellini and sauce:
Add the cooked tortellini and spinach to the creamy tomato sauce and toss until well coated.
